The Oxford Dictionary should include a picture of Gayle V's Best Ever Grilled Cheese in Chicago to its definition of grilled cheese. Grilled cheese is my comfort food. After almost three years, I remember my first bite of The Classic. I had the chance to speak with Gayle to learn more about how she incorporates her mission and vision into her product offerings.

2. What makes Gayle V's Best Ever Grilled Cheese different from other restaurants?
Gayle V’s Best Ever Grilled Cheese is different from other restaurants in that we started at the farmers market, then opened a pop up location for 3 months before moving into a small grab and go space and now I have a great space with dine in for 45 people. 11 years and counting :)

Everyone should dine at Gayle V’s because of our great atmosphere and food. We have a relaxing, chill vibe with live music every Thursday and Friday from 11-2. Great food, great music in a great space.

The future of dining at Gayle V’s Best Ever Grilled Cheese remains to be seen. Expanding and/or mixing up the menu, multiple locations, increasing our hours to include nights with more live music, adding beer/wine? One never knows! Stay tuned.
